It’s a super easy shepherd’s pie. It’s so warm and full of flavor, you will have to go back for seconds! Traditionally, shepherd’s pie is made with lamb and feel free to substitute the real thing!
You will need: 2½ pound beef chuck roast (or lamb), 2 tbls vegetable oil, 1 large carrot, 1 clove garlic, ½ onion, ½ cup dry red wine, 3 cup water, 3 bay leaves, ½ tsp dried thyme, 1 cup frozen peas, 5 russet potatoes, 6 tbls unsalted butter, 3 tbls sour cream, ⅓ cup freshly grated parmigiano reggiano, salt and pepper.
