Creamy Chicken Enchiladas

These look fantastically delicious!!! Put them on the menu for this week and you’ll not regret! These enchiladas are really good and also quick and easy to make. It is such a nice combination of flavors that go so well with a side of refried beans and rice.

You need: 10 flour tortillas, cooked shredded chicken, 2 cups shredded Monterey Jack Cheese, 3 tbsp. butter, 3 tbsp. flour, 2 cups chicken broth, 1 cup sour cream and 1 (4 oz.) can diced green chiles.

You can cook your chicken a couple of ways:
– you can roast a couple of chicken breasts in the oven
– you can boil your chicken until cooked
– you could use a store bought rotisserie chicken
