Poached Chicken With Bok Choy In Ginger Broth

This recipe is great because is healthy and tasty and it’s packed with ginger in the broth. The broth is packed with other flavors from fresh dill, scallions, thai chiles, mushrooms and that broth poaches the chicken which makes it flavorful as well.
In order to create this recipe you’ll need: 32 ounces chicken broth, peeled ginger, a bunch of scallions, 1 thai chile, 1/2 cup fresh dill, 6 ounces of shitake mushroom stems and 2 boneless skinless chicken breasts.
